Established more than 200 years ago and located at Celles-sur-Ource, in the Aube Valley close to Burgundy, the vineyard which produces Le Medaillon Champagne abounds with beautiful parcels of vines, well exposed and perched above Burgundy-quality soil (the exact territory was disputed by the County of Burgundy and County of Champagne, with the Comte de Champagne eventually establishing its right). The vines benefit from a base of chalky sediments with a clay-limestone surface layer - these conditions of soil, climate and the grapes themselves give Le Medaillon Champagne its unique flavor and bouquet, and the Champagne's personality truly cannot be found anywhere else. The bottles are stored in a deep, cool cellar, which catalyzes a second fermentation in the bottle. Placed on their neck panels slightly inclined downwards (for the purpose of lowering the deposit to the neck of the bottle), the bottles are turned 1-3 times per day, for several weeks before theyre ready to be disgorged. Le Medaillon Brut is a complex blend of 70% Pinot Noir and 30% Chardonnay. Using grapes grown from the finest parcels, this delicate Champagne is aged 30 months in the cellars where it is permitted the time to develop to a glorious finish.
